Make Lauki ka Paratha, The Shortcut Way 🫓🥒

I love paratha!! All kinds of parathas!! I have grown up eating this stuffed flatbread very traditional way. When I moved out of country, I realized being authentic to our traditional ways is very challenging. So, how do I satiate my cravings? In this blog, I will share with you a work-around all the hard-work and prepare this delicious stuffed bread!

Frozen paratha or filo pastry1 or 2 paratha or 12 gm of pastryThaw a paratha so that it can be rolled into thinner paratha using a rolling pin or a glass bottle!

Preparations

  1. Dump all the roughly chopped bottle guard in a pan and add the seasoning with salt. Cook it covered at slow flame. Occasionally stirring.
  2. The bottle guard is going to loose a lot of water after 10 minutes and gets soft.
  3. Turn off the flame and and let it cool for 5 minutes. When it cools, add onion to it.

Cooking

  1. Roll the paratha into thin round sheet. It should not be the see-through thin but close to it. Two of these will make one paratha.
  2. Spread a coat of oil to grease the pan. Put one of this roll of paratha and spread the bottle gourd mixture and cover it with the second roll of paratha and press the edges with your finger to seal it shut.
  3. Turn on the heat and keep it on medium flame. Cover this and let it cook. After 4 minutes flip it and cook for another 4 minutes until crispy and golden.
  4. Pair it with fresh cream or yogurt and Enjoy!
